Egg and Mushroom Bake – October Recipe

The word “breakfast” literally means “to break fast”. A “fast”, as you know, is a period of time where you don’t eat so it’s vital to eat in the morning to give your body some food so it gets the ‘wakeup’ it needs to start your day.  Unfortunately, though breakfast is the most commonly skipped meal and if you are guilty of routinely missing breakfast then you are really harming your health and weight loss goals.

Skipping the morning meal can throw off your body’s rhythm of fasting and eating. When you wake up, the blood sugar your body needs to make your muscles and brain work their best is usually low. Breakfast helps replenish it.  If your body doesn’t get that fuel from food, you may feel zapped of energy — and you’ll be more likely to overeat later in the day.

Egg & Mushroom Bake

Ingredients
2 tsp olive oil (for gratin dishes)
1 Tbs olive oil
2 tsp minced garlic
11/2 cups button mushrooms, washed, dried and sliced
1/4 tsp salt, divided
1/4 tsp black pepper, divided
4 large eggs
2 tsp grated Parmesan
2 tsp chopped parsley

Directions1. Heat oven to 180 degrees. Brush two small, flat gratin dishes with olive oil.
2. Heat 1 tablespoon olive oil in a frypan over medium-high heat, about 2 minutes. Add the garlic, the mushrooms, 1/8 teaspoon salt and 1/8 teaspoon black pepper. Cook, stirring, until mushrooms have released their liquids and are tender (about 5 minutes).
3. Divide the mushrooms among the prepared baking dishes. Break two eggs on top of each dish. Sprinkle the eggs with the remaining salt and pepper and with Parmesan. Bake 10-12 minutes for cooked whites and semi-soft yolks. Garnish with parsley and serve.
