February Recipe; Frittata month!

The holidays are over, the kids are back at school so now it the time to get serious about losing those extra Christmas kilograms.

The best way to ‘attack’ your weight loss plan is to keep it simple – reduce your carbohydrate intake & replace the carbs with real, healthy food.  Why not make up a batch of our tasty Vegetable Frittatas?  They are just the so convenient…you can eat them hot or straight from the fridge! Low in fat, carbs and calories but high in protein, these frittatas are perfect for lunch.  Put 1 or 2 in your lunchbox with a green salad & all that extra protein will help you avoid the mid-afternoon ‘slump’ (which, in turn, will help shrink your waistline).  These are also great in the kid’s lunchboxes because they are so nutritious:  their energy levels benefit & they won’t come home ravenous as the frittatas will really help them to feel fuller for longer too.

VEGETABLE FRITTATA  – Serves 4
Cooking oil spray
1 medium white onion, sliced thinly
2 cloves garlic, chopped
1 bunch asparagus, trimmed and chopped
1 red capsicum, sliced thinly in strips
1 cup broccoli, chopped
6 olives, pitted and chopped
4 eggs, beaten lightly
4 egg whites, beaten lightly
2 Tbsp parsley, finely chopped

METHOD: Lightly spray non-stick pan with cooking oil spray, add onions and garlic. Cook until onion softens. Combine asparagus, capsicum, broccoli, olives, eggs, egg whites and parsley in large bowl. Reheat non-stick pan and re-spray with cooking oil. Add frittata mixture to pan and press down. Cook uncovered in low oven until almost set. Remove from heat and place pan under heated grill until top of frittata becomes firm and browned. Serve immediately.
