 Cajun Chicken With Avocado and Lime Juice

Winter just makes you want to eat hot foods so you can feel warm from the inside out – after all, there is nothing like a satisfying meal to make your stomach feel full and content.

This month, our ‘Cajun Chicken With Avocado and Lime Juice’ recipe is just perfect for Winter.  This is a low carbohydrate recipe, so it’s great if you are on our Quickstart or Low GI eating plans:  the large portion of chicken per serve certainly helps you feel ‘fuller’ for much longer after you have finished your meal.  In addition to that, the herbs and spices used in this recipe add a little bit of ‘heat’ to the dish which is very ‘warming’ to your body.  I am sure that your whole family will love it.

Cajun Chicken with Avocado and Lime Juice

4 chicken breast fillets (200g each), skin removed

1 Tbsp sweet paprika

Pinch of cayenne pepper

1 avocado, flesh cubed

2 Tbsp lime juice

1 long green chilli, seeds removed, thinly sliced lengthways

2 Tbsp fresh chives, chopped finely

Olive oil spray

2 cups green beans, steamed

Method:  Cut each breast into 3 smaller pieces and then toss in the combined paprika and cayenne to lightly coat. Set aside. Place avocado, lime, chilli and chives in a bowl. Season and stir gently to combine. Set aside.  Heat a large frypan over high heat and spray with oil. Cook chicken, in 2 batches, for 2 minutes each side until cooked. Stand for 3 minutes, then halve each piece on an angle. Serve chicken on beans and salsa, and drizzle with any resting juices.
