March Recipe; Berry-Licious Breakfast

Breakfast is the most important meal of the day:  in fact, the word literally means ‘break-fast’!  When you wake up in the morning, your last meal may have been over 12 hours ago, so it is important you eat breakfast in order to give your body all the vitamins, minerals and glucose it needs to get your body ‘ready for action’.

Our Berry Muesli Sundae (Recipe Book: LGI & LFHF eating plans) is a perfect start to your day… or can even be a ‘colourful’ addition to your menu next time you invite friends over for breakfast / brunch.

Berries are truly one of nature’s most ‘healthy’ foods and are very low in calories.  A whole 150g punnet of blueberries / raspberries have around 78 calories, low in carbohydrate AND absolutely no fat!  Blueberries & Raspberries are rich in Vitamins A, C, E and beta-carotene as well as rich in the minerals potassium, manganese and magnesium. 

Most importantly, though, both types of berries are rich in potent antioxidants.  Antioxidants help to stop the production of free radicals:  these are groups of ‘damaging’ atoms that impair the structure of human cells and the immune function.  Therefore, a high level of free radical activity can lead to disease. 

Anthocyanins create the blue colour in blueberries and the red in raspberries.  Anthocyanins give berries their antioxidants action – in fact, blueberries have the highest content of anthocyanins in any fruit or vegetable.
