20 Minute Roasted Chicken and Veggies

There is nothing worse than having a late finish at work, knowing that you haven’t even thought about what you are going to cook when you get home. (and the Uber Eats option is looking like a real possibility).

20 Minute Healthy Roasted Chicken and Veggies  Serves 2

2 medium chicken breasts, chopped into ‘chunks’
1 cup capsicum, chopped (any colors you like)
½ onion, chopped
1 zucchini, chopped
1 cup broccoli florets
½ cup cherry tomatoes, chopped in half
2 Tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
¼ tsp paprika (optional)

Preheat oven to 200 degrees. Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes. 
Place the chicken and veggies in a medium roasting dish (line with baking paper for easy clean-up). Add the olive oil, salt and pepper, Italian seasoning, and paprika. Toss to combine. Bake for 20 minutes or until the veggies are charred and chicken is cooked. Serve immediately and enjoy!
