Tomato & Zucchini Soup (pictured above)
Ingredients: 2 Cups tomatoes, peeled and chopped. 2 Cups zucchini, diced. 3 Stalks of celery with tops, chopped. 1 Medium onion, chopped. 1 Small garlic clove, chopped. Half tsp parsley, chopped. Half tsp sea salt. 3 cups water. 1 Tbsp tomato paste. 4 wholemeal bread rolls.
Method: Place all ingredients in a saucepan (except bread rolls). Bring to the boil. Reduce heat and simmer 20-30 mins or until vegetables are tender. Serve with a crisp bread roll. Bread is the concentrate.
