Yummy Healthy Recipe – June is soup time!

Now that Winter has well and truly set in, you have probably found that the prospect of eating a cold salad for lunch is not so appealing.  Your body definitely talks to you when the weather cools down, and it is saying ‘feed me warm foods’.  Soup is the perfect meal for this time of year AND it’s so good for you.

TOMATO & ZUCCHINI SOUP                                          Serves 4

(per serve: 3g fat / 35g carb / 8.5g protein / 198 cals / 827 kj / H&V)

2 cups tomatoes, peeled and chopped

2 cups zucchini, diced

3 stalks of celery with tops, chopped

1 medium onion, chopped

1 small garlic clove, chopped

½ tsp parsley, chopped

½ tsp sea salt

3 cups water

1 Tbsp tomato paste

4 whole meal bread rolls

METHOD:  Place all ingredients in a saucepan (except bread rolls). Bring to the boil. Reduce heat and simmer 20-30 mins or until vegetables are tender.  Serve with a crisp bread roll.
